He washes, irons, and picks herbs for the meals. This diversity of tasks speaks volumes about Diego Mingorance's role at restaurant De Nieuwe Winkel in Nijmegen. He is available for (almost) anything. “I love it.”

Cheerfully, Diego Mingorance (31) swings open the door of De Nieuwe Winkel. Just a little while longer, and the Nijmegen restaurant will open again this Friday. But even now, shortly before the space is filled with fans of botanical gastronomy, it's a lively affair in the establishment. “We have to prepare everything well, right,” says Diego. “Once people come in, they should want for nothing.”
